California Steaming
PX Cask Finished!
The first Pedro Ximenez cask finished malt produced by Of Mind Distillery. Originating from the fabulous Screw Steamer from Lacada Brewery, a California Common beer that was every way as good as the original, now sadly departed, Anchor Steam beer. With initial aging in medium toast oak California Steaming started light on the palate before the exuberance of PX swept in to spice things up. A distillery staff favourite for sure!
Distopian Smoke
Embrace the darker side of malt spirit.
An experimental triple distilled malt produced from the superb Utopian Stout from Lacada Brewery in Portrush, Northern Ireland, with initial ageing and cask finishing after both the second and third distillations to develop a more complex layering of flavours. Dark sultry tones and a subtle smokiness that warmed the senses. Our Head Distiller's experiment which turned our rather well!
Salamander Series Single Malt
Single Cask Origin ... Different Cask Finish
A series of double distilled single malts, again produced from the superb Utopian Stout from Lacada Brewery. Primary aging in white oak of varying toast levels for each release, and finished in a oak cask previously used to store Port, Shiraz Wine, Sherry and Rum. Named as tributes to a classic song!
